I’m a little worried that making a traditional French desert called “Ille Flotant” (“Floating Island” aka “Oeufs a la Neige” (Eggs in Snow) (Sweet, for early spring!) into swans makes me semi un-vegetarian. But I had meringue left over after I poached the quenelles, so I let them grow up into the pretty swimmers i knew they could be….
