I’m a little worried that making a traditional French desert called “Ille Flotant” (“Floating Island” aka “Oeufs a la Neige” (Eggs in Snow) (Sweet, for early spring!) into swans makes me semi un-vegetarian. But I had meringue left over after I poached the quenelles, so I let them grow up into the pretty swimmers i knew they could be….
Looking forward to the rest of the season, the eggs have hatched! Happy Spring!!!
*The recipe I used was from The Chez Panisse Dessert cookbook (delicious!) but this is a sweet and lovely description of the difference between Ille Flotant and Oeufs a la Neige, with a recipe that looks delightful, too! http://www.latartinegourmande.com/2007/12/12/vanilla-cardamom-snow-eggs/
